An Elevated Wine & Culinary Journey Through the Seasons at Anthology at The Four Graces
Produced in partnership by Travel Dundee and the Dundee Hills Winegrowers Association
Anthology at The Four Graces is more than a wine experience—it’s a place where food, wine, and storytelling come together in one volume of greatest hits at a time. This intimate experience redefines fine dining in the Dundee Hills, led by chefs Chase Williams and Zack Ehrlich and sommelier Peter Marcy.
The ten-course menu, which changes every two months, reflects the team’s deep connection to the valley. They believe there’s more to Oregon’s seasons than just four, and each menu captures a fleeting moment in time—what’s freshest, what’s preserved from past harvests, and what prompts nostalgia and stories from each. “If it’s not local, it’s not the focus of the dish,” says Ehrlich. Ingredients come from small, family-run farms and The Four Graces estate, where they forage, garden, and preserve to create layers of flavor.
The name Anthology hints at its definition of a curated collection of the very best. Each new menu is released as a new “Volume,” adding to an ever-evolving story of the Dundee Hills and Willamette Valley. With wine pairings spanning local and global selections, sommelier Peter Marcy ensures every sip is as thoughtfully chosen as the ingredients on the plate.
The chefs designed Anthology’s open-concept kitchen and chef’s table with one goal in mind: to spend every moment of the evening with their guests. There’s no separation between kitchen and dining room—Chase, Zack, and Peter are right there, plating, pouring, and sharing the inspiration behind each course. It’s an immersive, interactive experience that feels more like a dinner party than a traditional tasting menu.
For Chase and Zack, the dinner table has always been sacred. Growing up in busy households, dinner was when everything paused, when stories were shared, and the simple act of gathering became something meaningful. That sentiment is at the heart of Anthology. It’s not just about the food and wine; it’s about how those elements forge relationships, creating experiences that linger far beyond the last bite.
For those who wish to continue the evening, luxurious accommodations at Grange Estate or Black Walnut Inn & Vineyard offer a seamless transition from the table to a peaceful overnight retreat, with sweeping valley views from 1,000 feet above the vineyards.
