- Toss the sauce with freshly cooked tagliatelle until well coated.
- Plate the pasta and finish with additional grated cheese and a generous shaving of white truffle.
Garnish (Optional)

- Baby arugula can be used in a pinch
Wine Pairing Suggestions
To pair a wine to this truffle tagliatelle, look for wines like a Chardonnay that contrast the rich and creamy sauce, or opt for a Pinot Noir which will compliment the earthy notes of the truffle. Both selections below showcase the unique character of the region and elevate this indulgent pasta dish.
- 2022 Alexana ‘Revana Vineyard’ Dundee Hills Chardonnay – This Chardonnay from Dundee Hills brings bright acidity and gentle orchard fruit notes that cut through the richness of the cream and truffle sauce, while its subtle oak adds depth and harmony to the dish.
- 2022 Domaine Drouhin, Dundee Hills Pinot Noir – A classic Dundee Hills Pinot Noir with red berry, earth, and spice elements that echo the earthy umami of the truffle and mushrooms, offering a silky, elegant contrast to the pasta’s creaminess.
