Fioe gras de terrine with brioche, Pinot noir cherries and mushroom salt
Pâté en croûte with wild Quebec herbs

First Plate –
French Niçoise salad
Oregon olives, Oregon tuna, eggs, tomatoes, poached butter herb potatoes, green beans and french radishes

Second plate –
Duck cassoulet

Third course –
Wood-fired King salmon with Pinot noir beurre rouge and vegetable ratatouille

Fourth course –
Creme brûlée
