Lemon Salmon

Can you pair salmon with red wine? Yes! The capers in this recipe contrast with a jammy Pinot Noir and the citrusy saltiness of the saltiness compliments. The minerality of Chardonnay or a fruit-forward Rosé also make for lovely pairings to this healthy, flavorful dish.

  • 2 lbs salmon filet
  • 1 lemon sliced in rounds
  • Kosher salt
  • Extra Virgin olive oil
  • ½ cup capers drained

Lemon sauce:

  • Zest large lemon
  • Juice from two lemons, roughly half a cup 
  • 6 garlic cloves, chopped pressed
  • 2 tsp oregano
  • 1 tsp smoked paprika
  • Black pepper
  • ½ cup capers drained


  • Heat oven to 375 degrees
  • Make sauce in a bowl, mix all ingredients together
  • On a sheet pan lined with foil, brush with olive oil
  • Ensure salmon is dry by patting it with a paper towel, and season both slides with kosher salt
  • Top with lemon garlic sauce evenly, add lemon slices on the top of the salmon
  • Fold foil over salmon and place in oven with the seam side up
  • Bake for 15 to 20 minutes depending on the thickness of the fish
  • Serve immediately
