The Bergström Vineyard Pinot Noir is our flagship single vineyard Pinot Noir. Our first estate vineyard, planted in 1999, located in the red volcanic Jory soils of the Dundee Hills. This wine is usually one of our more cellar-worthy Pinot Noirs sometimes taking two or three years after bottling to fully blossom and unfurl its potential.

The 2013 Bergström Vineyard Pinot Noir is vibrant ruby in color with pink reflections and has aromas of pipe tobacco, dark chocolate, citrus oils, savory herb garden, black cherries, and mint. There is sweet bright crunch of fruit in the mouth with succulent mouthwatering acidity which drives this wine’s energy. This wine possesses a core of dark red fruits and sweet spices in the mid palate with very fine dusting of sweet tannins and a long finish. A very unique but special bottling from this great vineyard site.

Behaving much more like a young Burgundy, this great Oregon Pinot Noir should be consumed between 2017 and 2025, but could drink well for two decades or more.

The inclusion of Lillies Vineyard in this blend adds a lovely black pepper note on the aromatics, in addition to the sweet tobacco, white flowers, cardamon, fresh herbes de provence and sassafras. On the palate we find nice weight up front carrying into the mid-palate. There are notes of earth followed by wafts of wood smoke. Although it seems light on its feet, there is a richness throughout its sweet core.

Located in the heart of Dundee Hills and “around the corner” from Élevée is Briar Rose Creamery, a small, artisan cheese maker. Their award winning cheese can be found in local farmers markets, as well as specialty grocery stores in Oregon. And how lucky we are to hand select three of their delectable cheese to pair with our wines.

While Rosé is now a year-round wine, to us, there is no better way to celebrate summer than drinking our “Three Martin” Rosé. It’s blush pink color hints of strawberry and melon and bright acidity is perfect pairing with Callisto. This is an Alpine style, semi-firm cow’s milk with notes of sour cream, preserved lemon, brown mustard, shiitake mushrooms, brown buttered popcorn. The Ridgecrest Vineyard Riesling, gives you honeysuckle and peach. It is excellent with Damona, a semi-soft cow’s milk with hints of buttered toast, green olives and panna cotta. And the highlight of this pairing is the 2015 Élevée Vineyard Pinot noir. We pulled these wines out of our library because of how well it pairs with Butterbaby. This cheese is a soft bloomy, cow’s milk cheese. It is super soft with delicate, thin, fluffy white rind. Texture is custardy and taste of warm buttermilk, creamed corn, papaya, oyster mushrooms and crème fraiche.

Winemaker Jacques Tardy blended Dijon, Pommard, and Wadenvil clones from the vineyard and aged the wine for 22 months in 5% new French oak. This complex wine emerges with aromas of violet, cherries and blueberry. Bright on the palate, flavors are sweet with concentrated dark berry notes and rich chocolate, leading to a long and elegant finish of earthiness and a light touch of oak.
