Sparkling Red is Ready for Spring
Sometimes it takes a little daring to create something delicious…Sometimes it takes a big brother named Nik to ask for an impossible red sparkling wine a la Lambrusco and reminiscent of the old country…
While Nik was the inspiration for making the Evolution Sparkling Red, it took a lot of trial and error to figure out the perfect blend. We used our Evolution Red as the base and added in pinot noir that had been left to soak on its skins for 48 hours prior to pressing. Then, just before bottling, we added the bubbles to balance out the sweetness to create a crisp and off-dry sparkler. In honor of Nik, we affectionately call this wine Nikbrusco. Pop the top and celebrate someone special today—Cin! Cin!
This brut sparkling wine is crisp and off dry with notes of cherry and cranberries.
Pair with spaghetti and meatballs, grilled cheese sandwiches dipped in tomato soup, or carne asada tacos.
