Whipped Briar Rose Fromage Blanc topped with Cherries



This dish will bring a smile to everyone around your table. La Bastide Bed & Breakfast’s recipe features decadent cheese balanced by the acidity of fresh cherries, offering a symphony of flavors! Don’t miss wine pairing suggestions provided by local sommelier, Sean Pellatz.

INGREDIENTS

  • 1 Tbls Briar Rose Fromage Blanc, at room temperature (a high-quality chevre can be substituted)
  • 2 tbls whipping cream
  • 1-2 tsp powdered sugar
  • 1/4 tsp fresh grated nutmeg
  • 2 dozen fresh Bing and/or Rainier cherries, pitted and halved

INSTRUCTIONS

  1. With a mixer or immersion blender, mix the whipping cream until it is fully whipped (just until stiff peaks form – do not over-whip).
  2. With a fork, mix the powdered sugar and nutmeg into the Fromage Blanc, taste, and adjust sweetness as desired.
  3. Fold in the whipping cream.
  4. Spread a thin layer of your whipped fromage blanc onto 4 small plates and top with cherry halves.

General Wine Characteristic: Something light and bright with high acidity to pair with the fat in the cheese and compliment the cherries

2021 Holloran Riesling Le Pavillon: Riesling isn’t the varietal everyone has in mind when thinking of the Dundee Hills but after trying the Rieslings at Holloran, your mind will be changed! Hints of white peach, paraffin, and fresh orange. While the mid-palate will bring on pear and stone fruit, the acid is the stunner of the show that will be playful with the cheese enhanced by the cherries.
